Mushroom & Kale Savory Oats

I love savory oats. If you’re used to only having sweet oats, you might be a little hesitant to try these. But I promise, it’s like comfort in a bowl that just feels so good to wake up to (or have for lunch or dinner, too). Plus, it’s super simple to make. You’ll be sitting down to eat in about 10 minutes.
In this version, I added kale and mushrooms to the mix, but you can add any veggies you like! Just add them to the pan during the sauté step and you’re good to go.

Ingredients
- 1 1/2 cup of mushrooms
- 2 cups chopped kale
- 1 chopped shallot
- 2 cloves garlic, chopped
- 2 tablespoons olive oil
- Rolled or steel-cut oats, or a whole-grain hot cereal mix (I typically use Bob’s Red Mill 8 Grain Hot Cereal)
- Your choice of broth (vegetable, chicken or bone broth work great)
- Your choice of toppings (you name it, you can add it: over-easy or jammy egg, green onion, red pepper flakes, sesame seeds, cracked black pepper, hot sauce, etc.)

- Medium pot
- Cast iron or sauté pan
Instructions
- Add oil and shallot to your cast iron or sauté pan over medium heat. Stirring occasionally, sauté for about 3 minutes or until shallot begins to become translucent.
- Add in kale and mushrooms to the pan and cook for an additional 5 minutes, or until kale just begins to wilt.
- Add garlic to the pan and cook for another minute. Remove the pan from the heat and set aside.
- Using the measurements found on your oat or hot cereal package, measure out 2 servings of oats/hot cereal and the accompanying amount of broth (replace the water from the instructions with broth).
- Prepare oats/hot cereal according to the package using the broth in your medium pot, stirring occasionally to prevent it from sticking to the bottom.
- Once the oats/cereal is cooked through, add the mushrooms, kale, shallot and garlic mixture into your pot of oats/cereal and stir to combine.
- Serve the savory oats in bowls with your preferred toppings, and enjoy!
